The Øatmeal Bar is a new all-day breakfast bar in Eindhoven. Located inside Hutspot, menu specialties include oat porridges and bowls, all made from natural ingredients such as oatmeal, biological milk and homemade oatgranola. We had a Skype conversation with Linsey van Oers, founder of The Øatmeal Bar, about her passion for health, favorites recipes and how to start your own business.
Hi Linsey. Made any nice recipes today?
Hi hi! I’m actually on a mini break to Ibiza, so I haven’t made any new recipes. However, I did taste some really good ones at several healthy joints here. Does that count too?
I guess it does! It probably gives you a lot of inspiration.
Yeah, it is always nice to visit other countries and taste new things!
What is the story behind The Øatmeal Bar?
The Øatmeal Bar is a Scandinavian based, all-day breakfast bar where organic coffee and oats play the leading role. You can start your day with a bowl of homemade oatmeal porridge, come by for a quick vitamin stop between shopping with a fresh juice or smoothie, or just sit back and relax with your favorite coffee and a homemade oat cookie as you work on your laptop.
How did your passion for healthy food came to be?
It all started when I was 18 years old and someone close to me got diagnosed with cancer. The doctor at the clinic told us about a macrobiotic diet and how it has helped cure diseases. It made such a big impact on me that food could play such a major role in health that I started to read scientific articles about the relationship between food and health. I hope to inspire people who do not have the time or know-how to make healthier choices.
The oatmeal bowls and porridges look delicious! How do you decide what ingredients to use for each bowl?
It all starts with a blank sheet of paper and a pencil. I start with a base (porridge/yogurt) and try to come up with different types of bowls that meet different types of dietary preferences. There is always a mix between healthy and indulgent options and both sweet, savory and plant-based alternatives. I also try to include options lower in carbs and/or fat for people that are on a diet. Oats are low in gluten, so they basically suit everyone that have a gluten intolerance.
Why are organic products important for The Øatmeal Bar?
I believe in the power of natural ingredients. There is a growing body of evidence that shows some potential health benefits of organic food when compared with conventionally grown food. I truly believe that organic food does not only fuel our bodies better; they really do taste better when you take a moment to realize how the product has had the time to grow without pesticides, growth-hormones and antibiotics.

Also, there are many great coffee places in Eindhoven, but not many (healthy) breakfast places.
Do you usually have a bowl of oats or yogurt for breakfast yourself?
I prefer a combination of both; warm vanilla oats with some organic yogurt topped with some fresh fruits or nuts is my favorite. It is a filling breakfast full of good carbs and proteins.
What product do you always have in your fridge/kitchen?
Organic eggs, water & fresh fruits.
Can you recommend one bowl from The Øatmeal Bar menu?
Monkey Breakfast! Warm vanilla oats with peanut butter, banana and dark choco chunks.
What is your advice for young, aspiring businessmen/women in the culinary industry?
Stand for what you believe in and don’t be scared to go against the stream. I believe that if you truly embrace this mentality and have thoroughly designed your idea; you can rock any culinary business.
